For Gallbladder, I recommend a nice Riesling, it will complement the garlic and capers in the Bile sauce.

I think fresh organ meat calls for a strong, peppery red wine—maybe something from a Spanish vineyard…. On the other hand, the poor security [pun alert] salesman has a lot of fat on him….
