    There are somethings that happen in the cooking process that just work better with quantity. I’ve made as little as 2 quarts of beef stew, but 2 gallons works much better. Same with chili.

    I use a 22 quart canning kettle for my chili. But I only fill it half way up. OK, maybe a little over half.

    My son-in-law will make vast pots of stuff that no one wants. He might eat some now and then, and I may try to get some down for the cause. But when I’m there as de facto cleaner, I’ll wait for the magic moment when I can deep six it.

    I make about a gallon of veg soup, chili, or gumbo for the two of us three weekends out of five when it’s too cold and dark to grill (plus the weekend of each year’s last Farmer’s Market) – then freeze most of it to vary whatever I make the next weekend (the other two are usually meatloaf or pot roast).
