Ok, yes I knew that Lengua is Spanish for Tounge. I used to work in a part of Dallas that was called Little Mexico ‘cause of its Latino Population. There was a grocery store that had a great deli/meat counter that sold meats and they’d make a sandwich as well. They always had some Lengua cooked and ready to go. One Friday I bought one and took it home. The next morning I got up early to go fishing, but before I left, I took the time to slice it up for sandwiches to eat when I got back. When I did get back, imagine my surprise when (A) my Lengua was all gone, and (B) my 2 daughters said; “That lunch meat was sure good Dad, can you get some more?”.

I just wish I could try Tia Carmen’s Lengua Casserole myself. I’m sure it’s not that bad.

Tia Carmen must have added a lot of veggies to the casserole to make it green.
Any casserole recipe will do… you cut up (dice) cooked tongue and use it for the beef in ANY beef casserole recipe.
I’m sure she makes it with typical Mexican recipes and spices, but it would work with any beef casserole recipe.
