You clean the bird, then pack mud around it on the feathers. Bake until the mud dries, crack open the mudball and the meat comes away from the skin and feathers.

Baking is via heated air, used for breads and such, roasting or broiling is via infrared radiation for meat (and blackened feathers…)

I remember once reading about how you can cook a bird with its feathers still on and then peel the skin and feathers off.

I put my turkey in the smoker: takes about 10 hours to cook, but it is well worth it.
