My father-in-law had a friend who was an ambassador. Once, when he was in the US, he took us, along with his wife & 10-year-old daughter (who were both French), out to eat. The daughter, who didn’t speak English that well, saw escargot on the menu & ordered it. The waitress, in a sickly-sweet voice, said, “Honey, do you KNOW what that IS?” Her father replied, “Yes, she does; she’s been eating it since she was 2.”
The culinary habits of Americans is strange. They don’t want to eat some arthropods, but would eat others like crab and shrimp and lobsters. But not millipedes or spiders. What, not snails but will eat shellfish?

I once read about a restaurant in Japan that served a fish stew in which the fish was still alive (barely). Now that’s fresh.
