I think the professor was just kidding - the bartender and himself - knowing bartender would realize he’s not serious. And indeed it looks like neither of them took the remark seriously at all.
I’m wondering how the Alibi can afford to give away drinks of rare old liquor just in order to get an opinion. The best distilleries’ oldest bottles really do cost a fortune. If they needed an opinion that badly, they shouldn’t have risked buying the bottle in the first place.

On a trip to London last year I was looking for Single Malts and I found a bottle of 51 year old Macallan. It was only 4,995 pounds … yes, pounds.
If you’re interested, it might still be there … I sure didn’t buy it.
