….In *1806*the legendary gastronomist Grimod de la Reynière wrote glowingly of Appert, noting that his canned fresh peas were “green, tender and more flavorful than those eaten at the height of the season.” Three years later, Appert was officially awarded the Directory’s prize, with the stipulation that he pay to publish his method, which he did in 1810 as” The Art of Preserving, for Several Years, all Animal and Vegetable Substances.”
My Grandma canned everything ! From potted meats to vegetables, right out of her back garden. Her cellar was stacked with canning jars full of jams, tomatoes, peaches etc. As a kid I joked that if there was ever another world war, I was going to live in her cellar.I know that Mom canned goods during WWII but after, when my brother and I were growing up, as a working mom, she preferred the convenience of the grocery store. Funny, you mentioned Florida. When I lived there I used to can hot home-grown chili peppers and pickled watermelon, amongst other things. Guess a little of Grandma rubbed off on me.

While fresh from the garden peas are great in season, especially raw, frozen peas are equally great (heated of course).
