It demonstrates transfer of linear momentum. The one striking gives up all momentum and the one at the far end moves with the same amount of momentum, swings out, swings back, strikes, sends the first back, repeating other than frictional losses..To work properly, you need stiff masses, not mushy people and the masses need to be the same for each strikee and striker, or maybe just for the ones on the end, but as it is usually done, you can drop one, two, three, four to strike and the same number from the far end will continue to move.
