Anyone with an iota of brains knows that the best cuts of meat comes from the back half of an animal, be it cattle, elk, deer, etc.If you go to places in Montana, Idaho etc., you’ll find Rocky Mt oysters is highly prized. Google it if you don’t know what they are.

I know a lounge in Minong, WI (home of the world famous Jack Links meat products) that is split into two by a wall running the length of the building. One side is family dining, the other is the bar. The front half of a beautiful Whitetail buck faces the dining room. The west end of this east bound deer faces the bar. The entryway forms a triangle so it appears the deer is floating. Nice effect!
