    I don’t subscribe to the theory that we lose our taste buds and lapse into bland as we age. At 73, my palate is more sensitive, than when I was 33 – but probably, because I was a smoker back then.

    The only thing I have to be careful of, when I’m doing the cooking is my tendency towards really hot and spicy foods, which the rest of my family doesn’t care for.

    Much as I’ve tried, I haven’t been able to sell them on my Cajun, Mexican or Thai dishes or the use of Peruvian ghost chilies.

    Folks on the Ecuador coast, unlike the people in the Andes, don’t go for ‘heat’ in their dishes.
