Foie gras is fine. But I prefer Mardi Gras. No that’s not what I meant to say….
What is as wonderful as any PÂTÉ DE FOIE GRAS, I think, is properly prepared chopped liver, Jewish delicatessen style… by itself, in a salad, or my favorite way, on rye bread with lettuce, tomato, onions. Creamy/fatty, complex, meaty, nutty slightly sweet. Oh my. I have to drive over to Goldberg’s on Johnson’s Ferry now. On a toasted bagel with a little schmear of cream cheese is good too. Oh, that schmaltz.
I once met a man who claimed to have been a feeder at a foie gras farm. He claimed the ducks almost lined up to be force-fed after the first few times. He said the ducks liked it after they got used to it.

An unhealthy liver knows his gooses cooked.

One deep-fried blooming onion will double your liver’s size.

The difference is: Humans have the choice, ducks don’t.

There’s really no need to ingest liver of any sort now that Ipecac is widely available.
