Won’t work with a coffee maker that shuts itself off, but if you leave half a pot on overnight it evaporates down to a little over a quarter pot of gooey wonderment
I think I can help with the bitterness part. Leave a little bit of coffee in the pot with the burner on all day. Try a swig right before closing time. That should come close.

Oh, I wouldn’t say that. I think you’ve got the bitterness down pretty well.

Use Starbucks beans; roasted too fast so “bitter” is the most prominent feature (well, except for “ludicrously over-priced”).

Never spend more than $3 a pound for coffee to get that true office coffee flavor. Blend in factory floor sweepings for flavor variety.

You want bitter, just let the coffee boil for an hour or two.
