    I love zucchini. I can’t digest cucumbers well and so substitute them with zucchini in things such as salads. Deep fried zucchini is my favorite way to prepare this vegetable. That’s heaven on a plate. Mmmmmmmmmmmmmmm good! :-)

    Zucchini bread is delicious and freezes well. Great little gift to take to those who are house-bound.

    Slice the zucchini and fry it medium high. Add lemon juice when it’s almost done.

    About the only way I like zucchini is in a tomato sauce. Del Monte makes it, but it’s hard to find, so I can my own.

    Zucchini makes a surprisingly good (and healthy) lasagna. You substitute zucchini slices for the lasagna noodles. (Don’t tell Garfield)

    A friend once tried to share a recipe with me for Mock Pineapple made from zucchini. It was a lengthy recipe, requiring a lot of ingredients, but by the end of it, the zucchini slices ended up looking like and presumably tasting like pineapple. I mentioned the fact that it would be a lot cheaper and easier just to go buy a can of pineapple. By the way, deer love zucchini. Throw your surplus zucchini out for the deer…

    Let’s admit it. Zucchini is not everyone’s favorite vegetable. It may taste good mixed with something else, but alone…maybe not.

    Just pulled up my zucchini plant. It stopped producing early this year. Still getting tomatoes though? Must be a 2020 thing!

    As kids, we ate zucchini fried with flour on it all summer at lunchtime. Man, was that good. My mom also put zucchini in her potato pancake batter. It really was good.

    When we went to Hope for free veggies and fruit, zucchini was part of the group, I thought not turning into bread, so I did peel the skin and baked it and added seasoning tasted great and healthy. I cannot have fried. Loved the fruit we received and the veggies helped.

    When I was a kid, someone told us that a researcher used food coloring to make purple mashed potatoes. A lot of the test subjects reported they had a bad taste, and didn’t want to eat them.
