It’s called piebald coloration. Often the skin is similarly marked under their fur. It’s just another example of the wide variety in cats as a species, which has made them so successful.
Every kitty I have ever had up until the feral I rescued 4 years ago had pink paw pads and noses. My feral (semi-feral now, she adores my husband and me but doesn’t want anything to do with others and if they get too close, she will stand her ground) has dark gray paw pads and nose. Her skin is also dark gray. She is a gray and white tuxedo cat and the gray nose and paw pads look so cute against her white fur. Her white fur is a different color than the white fur on my callies, theirs is a glistening snow white while hers is duller. The skin coloration does change the appearance of the white fur.
