Let’s see, 350* for 20 minutes/ pound. Thermometer at 160* for breast meat, to kill salmonella, will that also kill COVID? Also, I usually marinade my bird for 3 or 4 days in white wine with herbs, onion, garlic, etc., and rub it with olive oil under the skin before it goes in the oven.
