I must admit I never add sauce at Taco Bell because I find their regular food spicy. (I blame having lived on my mother’s cooking the first 18 years of my life. They wouldn’t let me eat fast food.)
I rate taquerias by how good (flavor) their salsa is. As one owner longtime told me, cranking up the capsaicin is a method to disguise just average salsa.
My biggest complaint is with the taco shells. I’ve eaten at ‘Authentic Mexican Food’ places that make their tacos with those cardboard, packaged taco shells. Sure, it’s easier, but………………
if you don’t live in a big city it’s nearly impossible to get mexican food here in japan, even though supermarkets carry all sorts of thai and other “ethnic” food nowadays. our homegrown and home-prepared jalapeños and serranos are popular substitutes for the real thing among friends and acquaintances…
we just finished harvesting our poblanos and are preparing to dry them for anchos… ☺
First time I ever had Mexican was many, many years ago, not knowing what to order,I had what my friend had, big mistake. I had smoke coming out of every orifice on my body! Learned that water does not help when it that hot! Learn to really love the food!

Would Mr. Acevedo prefer mild-tasting salsa instead? Oh, wait… that was the mild-tasting salsa.
