    Cheese is fermented milk. In most cheeses, the lactose has been eaten by bacteria. Cream cheese and American cheese are exceptions. Trust me, I know from experience.

    Hard cheese isn’t an issue; softer cheeses are bad news. Lactose breaks down during the curing process. Roll in a wheel of Parmesan or Romano and go to town. Eat a bunch of cottage or ricotta and prepare for launch!
