2 cans albacore tuna1 12 oz package of “Wacky Mac” pasta. (Any pasta can be substituted.)2 cans cheddar cheese soup16 oz cashews bits and pieces (more is OK)1 can golden mushroom soup
Boil water with a little oil and a pinch salt. When water is boiling, add the pasta and reduce heat. Cook pasta until done “a dente.” Drain. Do not rinse.
Combine other ingredients in a three quart casserole. Add cooked pasta and mix thoroughly. Cook in oven with lid on at 350° or until the casserole is boiling.
While casserole is cooking, crush about a cup of potato chips. Add about a cup of shredded cheddar cheese and mix together.
Remove casserole from oven and stir throoughly. Sprinkle the shredded cheese and crushed potato chips evenly over the surface of the casserole. Return to oven with lid off. Cook until cheese melts.
I’ve never understood why some people call it “tuna fish”… Is that to clarify they aren’t talking about tuna birds? Or tuna legumes? Do they also say they are using “ground beef bovine” when they are BBQing hamburgers? And what’s up with the “ham” in hamburger, anyway? It’s not ground pork… Obviously I need more coffee.

I lived on casseroles in college and single days. Make a good one and eat for a week! TBL seems to have been on a food theme this week. Gladys’s cost cutting measures seem to have rocked Brutus’s and Wilberforce’s world.
My mom never made a casserole. I suspect they were too complicated for her and took too long. I didn’t even know they existed until I was in middle school when I saw a friend making one per mother’s orders as both parents worked. I still haven’t ever had one or made one. Yes, I know my experiences are not the norm. Some day I will probably make one. Maybe chicken. But not from soup cans, and no cheese. Maybe chicken, some veggies, and a nice roux sauce.
My “casserole” is elbow macaroni, stewed tomatoes, and either crumbled potato chips or bread crumbs on top. Occasionally I will add peas or green beans to the mix.
