I worked for awhile doing cabinet and countertop installation. At that time and place there was a restaurant that had a reputation for very high class (and expensive) food. Sure ’nuff, one day they sent me to repair the cutting board. When I walked in the kitchen door, the odor was RANK with not just old frying oil, but actual rot. Rotting meat! Yuck!
I had to move the cutting board away from the prep-counter to work on it and discovered that they’d been storing their meat cutting knives in the crack between the board and the counter. without cleaning them! Yuck!
I did the repair and left. When I got home (this was before cell phones) I called the health department. And began recommending to all my friends that they avoid the place.
They actually went out of business shortly thereafter. No idea then or now if my “unofficial inspection” or anti-recommendation helped cause them to quit. Nor if the health department responded to my call with an inspection. Life is full of mysteries.
When in high school I had a week end job at Howard Johnson’s restaurant. That kitchen was shining, and clean as a whistle, but one morning I saw a huge rat in the kitchen….I ran to the counter outside and jumped in the counter and sat til the manager came in…..

Behind and to the side was a feed supply business, whenever they got a load of hay or straw the restaurant got mice It sometimes was so bad the creatures would be jumping out of the cornbread drawers. I would tell patrons “You might not want the cornbread today.”

You don’t have to worry about keeping it a secret guys. If it’s that bad the health dept. will shut it down.
