    Fresh crawfish! Yum! Takes a bit a skill to eat them even relatively quickly.

    And if you are in Louisiana, and like crawfish, better eat them quickly, or you won’t get many.

    Can’t you hear it steamin’ in the pan?

    The smell of it’s enough to make you be a fan;

    When you taste it, you will shout, “Hooray!”

    It’s the gumbo, jambalaya, and the etouffe.

    There’s shrimp and rice and crawdad tails,

    Red hot peppers as sharp as nails,

    File’, okra, andouille

    In the gumbo, jambalaya, and the etouffe.

    Hoo-wee-oo-wee-oo-wee,

    The flavor sets your mouth aglow;

    Hoo-wee-oo-wee-oo-wee,

    The fire inside will let you know

    That Cajun cookin’ can be grand

    (As long as there’s a fire extinguisher on hand).

    If people adk, then you can say,

    “It’s the gumbo, jambalaya, and the etouffe.”
