It’s amusing that the tree from which bay leaves are harvested: California Bay Laurel, has the same genome as the Mytrlewood which grows exclusively along the coastal range in Southern Oregon. But don’t tell folks in either area: They get downright regional about “Our Local Trees”! (We harvest “bay” leaves whenever we’re in the S Oregon coastal region.)
Bay leaves don’t get soft when you cook them. They are just as rigid when you’re swallowing them as they were when you put them in the dish. As such, they are a choking hazard, and can even scratch your esophagus.

I’ve never been sure that bay leaves actually do anything for a recipe. But when they’re called for, I put them in, and then take them out again.
