As the resident Canadian here … fresh hand cut french fries are the best for this, but thick cut frozen will suffice. The gravy has to be chicken/beef mix, dark brown, and thick as ketchup. The cheese curds have to be from mozzarella cheese, and under 36 hours old, to get the best ‘squeak’ when bitten into.
If it has any cheese product except mozzarella curds, then you have cheesy fries with gravy.
