I used to live in a relatively new development on the northeast side of Madison, WI (40 years ago). I did not realize the developer had scraped off all the topsoil before building the houses. That fact became evident when the only thing that grew in the soil, other than grass, was scallions and parsley. Not much of a garden.
I plant some every spring for the Black Swallowtail butterflies. The female lays her eggs on it and the caterpillars eat it. I plant dill for them, too.
I think I might start eating the parsley at restaurants. Back when kale was a garnish, my granddaughter asked a waitress if she could eat it. She got the reply “It’s just for looks” She asked again "But can I eat it. She was told she could. She took a bite and spit it out. “Yuk” was the verdict.
