There should be no red wine in a Bearnaise sauce. Itâs a âwhite sauceâ. I used to make it too from scratch. Too rich in wrong fats, unfortunately. Verne must have watched a lot of Julia Childâs cooking shows or he attended a French Culinary school? That would make a great story!
