I still remember teaching at a middle school in Jefferson County Georgia in 1988. It was 98% African-American. The students had a salad bar. I watched some of the girls put a few lettuce leaves on the plate and then about 2 inches of bacon bits.
Personally, I’ve always loved a good salad bar, but yeah, it was never the most popular option at the school lunches in my experience. Plus, eating healthy is great and all, but people, kids or adults, also still enjoy some variety, and I sort of doubt that’s what the school district will be going for here, because it sounds like they’re going for the bare minimum option.
