I think context has a major affect on what spices we like. I didn’t understand horseradish until I was visiting a woman’s house who had some thin sliced roast beef and offered me horseradish to go with it. I told her I’d never had it and she proceeded to tell me about the horseradish nose orgasm and guided me to the theretofore unimaginable experience.
When I was in high school I worked as a dishwasher at a sort-of restaurant with a banquet room where I got to indulge in quite a few real Crème de Menthe parfaits on lucky days. The “parfait” was then lodged in my mind as a very great thing.
Later, after college and moving to Boston, I liked a restaurant where the only ice cream desert was a ginger parfait. The parfait (“perfect”) nomenclature had me trying my best to find enjoyment in it. When I don’t remember that failed effort, I think I remember liking ginger. I do enjoy gingerbread this time of year, but I know with enough sugar, almost anything can be entertaining.

“ginger” is a slang term for a red haired person (note the orange icing), and since red heads often have freckles, he added the chocolate chips.
