I’d have sworn I saw this before. But the date is current.
Spouse and I have been writing down some family favorite recipes. Probably will be better received by the kids than some kind of geezer “wisdom”.
Here’s one:
Mac and Cheese for two people
Mac: Cook macaroni using 8 oz of dry noodles and lots of water, per instructions on packet.
Sizzle 1/4 inch crosswise slices of 4 strips of bacon and after a bit add 1/2 a “keeper” onion sliced but not minced. Cook until bacon is crisp and onion is transparent.
Add 1/4 cup of flour, cooking until the raw flavor is gone. If the roux is too stiff, add a bit of olive oil until thick but not stiff.
Slowly mix in 1.5 to 2 cups of fluid. For adults, you may use beer or wine. For kids, use milk (adults too if they prefer), stirring with a whisk until smooth (as smooth as bacon and onions allow). Heat on medium until the sauce thickens. It should be a little bit liquid. You may add some dried herbs. Basil, tarragon, thyme, oregano. Start simple and see how you like it.
(about now, check the noodles and turn off heat if done)
Lower sauce flame to low and stir in about 6 oz of sharp cheddar cheese, grated. You may use any other flavor (except blue), but it won’t be the same. Stir until fully mixed together. Adjust salt and add fresh ground pepper.
Drain the noodles, put them back into the pot and pour in the cheese sauce. Smash a bag of frozen peas to break them apart and dump in about a cup full. Stir it all together.
The peas will warm up while cooling the dish sufficiently to eat immediately. Serve in bowls.
My dear Mother made outstanding strudel. Never found anything like it. As a kid, I never got my fill. ( “leave that for our guests!”) Apple, cheese and cherry were all delicious. As an older adult I asked Mom to teach my wife, who was very willing to learn, the strudel recipe. For years Mom kept putting the task off. She took her recipe with her at 99.
My grandson wants me to put my life in writing for him. He even bought a book made for that and gave it to me. It’s been several months and I haven’t started it yet.
I used to have a moustache. I love hot sauce and my wife hates it. One time I had apparently gotten some on my moustache and when I kissed her her mouth stung. She was not amused! I have heard of hot kises but it seems she did not like that one!
