I just prepared the almonds in different ways and placed them in separated plastic containers. The result was a mess, and after three months when I opened the containers to make the first control, the smell was so disgusting that I had no choice to throw it all to the toilet. After that experience, somebody close to me, explained to me that both the bacteria that generate putrefaction and fermentation are both present in the almonds, and that the result depends on a race between those. Its probable that what Roy has is not fermented but putrid. In my case, the stench was quite powerful
