Bring the zucchini to my house!!! We’d love some! My mom used to can zucchini with tomatoes and I loved that as a side (one of the few veggies I actually like). I also just came across a recipe on FB for zucchini “meat” balls. They look really good! I want to try them.
Not everyone is a zucchini fan, as I discovered back when I had a garden. They’ll eagerly take your proffered peppers or tomatoes but shun the squash. Fortunately, I lived in a community, at the time, that hosted a horde of herbivores. Unfortunately, many of them grew zucchini in their gardens.
Drop them at my house, Earl. Along with some yellow squash, red pepper, green pepper, mushrooms, broccoli, and asparagus. I’ll whip up some of my Dad’s World Famous Basil Chicken Pasta. Sauteed in olive oil with onion salt, garlic salt, pepper, basil, oregano, and cilantro.
I’ll have to go visit my mother soon. She always has a garden and she’s great at growing tomatoes, cucumbers, squash, and zucchini. I love taking some home with me and cooking up dishes with homegrown veggies.
I was never a fan of zucchini until I began to julienne it. Now I wouldn’t mind receiving a carload full (well, maybe not full) of the stuff – it’s a decent spaghetti substitute and far more nutritious.
The South Beach Diet got me interested in zucchini and yellow squash. I never liked cucumbers and always substitute zucchini for it. The South Beach Diet’s Green Gazpacho calls for 2 1/2 pounds of cucumbers, so I always substitute 2 1/2 pounds of zucchini for it.

In my home town in the summer one had to lock their car when they went to church else it would be full of zucchini when you returned.

Don’t like them much as is, but they are great in ratatouille. Unfortunately, I have to buy them and they are not cheap here.
