After all, it all started when someone figured out how to make a chocolate cake using chicken eggs, cow’s milk, and chocolate candies.

Being changed into something else does have a psychological impact. This while the last world war is going on and everything you know is being destroyed. Suicide would be common.
The phone call may have been from someone wanting her to reverse-mortgage her body. The missing people could be mortgagers who were culled before their natural deaths. She may be afraid they’ll try to cull her anyway without the mortgage, and is trying to make herself too skinny to harvest.

I’m guessing she was a thin and attractive woman before she mutated, and when she became a pig whose natural body shape would never be anything less than “chubby” she began this crash diet and near constant exercise regime in a futile effort to regain what she had lost.
