When my daughter was little, bison was by far her favorite meat.The only “catch” is that it has so little fat, you can’t just cook it like beef, or it’s liable to end up dry. Bison burgers are awesome baked at 400 (medium) or 450 (medium-rare).
Years ago, I was a member of the National Bison Association. When Bison herds were few. We nutruted and expanded herds as an alternative to cattle. Every year I would get my NBA letters and the postman always wanted to meet me. Turns out, he thought this was the other NBA, and I was a retired ball player. At 5’6" this was highly unlikely. On the Bison front, it is leaner, healthier for you, and Ground Bison or Steaks, both are extremely satisfying and delicious. It does have less marbeling, and as others have pointed out, cooking is a bit different, but I have never been disappointed in it.

Bison is a cloven-hoofed ruminant. So whatever else it is, it qualifies as kosher/hallal, depending on method of slaughter.
