Ah the joys of tradition changing! The entire time from Epiphany to Ash Wednesday was Carnivale, Mardi Gras was the culmination the point was to eat all the winter stored meat before Lent, which was TOTALLY meatless. Which was itself rooted in pagan traditions— eat all that winter stored meat before the thaws start happening often enough to spoil it AND don’t hunt the critters just when it’s birthing time.

Actually, in the days before refrigeration, it was to use up all the perishable food you weren’t allowed to eat during Lent so it wouldn’t spoil.
