    I’m one of those believers in using beans in chili – hence “chili beans”.

    There is no such thing as the perfect Chili or the perfect Bloody Mary_ ! Everyone ( myself included ) has their “special” recipe for both and everyone ( myself included ) think their recipe is the best !

    While I’ve made Louisiana Chili for my Ecuadoran family, the biggest “Gringo” culinary favorite and most requested is my Cajun Red Beans & Rice !

    Every time I hear the discussion about something being authentic, be it a game , a product or a recipe, I think of Pozole. It’s one of my favorite dishes. Pozole is a “traditional” soup or stew made with hominy and pork but, according to some sources, it was originally made by the Aztecs and the other indigenous peoples of Mesoamerica using the flesh of the people they sacrificed and/or conquered. Thanks, but in this case I’ll take the new and improved version!

    No such thing as too many beans in chili. Great source of fiber and protein and the perfect offset to the sirloin and heat.

    Eat a bowl of Roz’s chili, then accompany her to the “bean counter”…..the “after effects” of the chili should be in full force by then, and the “counter” can determine if there were too many….

    It’s “there ARE way too many . . . ,” not “there’s way too many . . . .” Brookins & MacNelly should know better.
