If humans couldn’t break down corn, there would be zero calories. I believe we cannot break down the hulls ( I think that’s what the outer cover’s called).
More precisely our bodies can not process the outer pericarp (the cellulose that encases each kernel of maize), once that is removed the inner portion of the kernel is extremely nutritious as it is primarily composed of starch (62%), protein and fiber (19%), water (15%), and oil (4%).
