By international agreement the middle men decided to limit and categorize the amount they could cut.. so now you have your 1%; 2%; 3%; 10%; 18% etc.. Now that does not apply to brown cow milk.. turned out they could not decide how to divvy it up..
Milk fresh from the cow is variable (up to about 5%). All the butterfat is removed, them replaced to the amount it is sold as. I remember when milk was not homogenize and the cream would come to the top, I would pour it off and use it on my cereal.

I worked at a cheese factory in the 70’s.We would have a tanker deliver the raw milk.Tasted great.One of the worst jobs I had ;~|

2% milk is an acquired taste, just like tea or coffee. I switched from whole to 2% after I got married and after a while it is okay.
