I had Keto “Mac and Cheese” for dinner with salad and Bratwurst last night. Keto Mac & CheeseIngredients:• 1 head cauliflower, cut small and boiled w/ 1 T ckn bouillon until very tender. Steaming is better so if you can, steam.• 1 tbsp butter• About 3/4 c heavy cream.• 1 1/2 tsp xanthan gum• 1 tbsp cream cheese• 1 1/2 c cheese of choice• Salt, pepper, garlic powder, mustard/powder, onion powder, dried parsley and whatever else you want to season it with. Put cooked crumbled bacon on top
Instructions:1. Melt butter. 2. Add xanthan gum to create paste. 3. Add cream cheese and melt that. 4. Add cream, enough to get a thick sauce.5. Add seasonings of choice. Add cheese and allow to just melt. 6. Add cooked cauliflower and mix.You can also bake this with mozzarella on top or pork rind crumbs and crumbled bacon.Remember cauliflower is watery, so make sure the sauce is thick so any water from the cauliflower doesn’t make it soupy.Optional: cut up sausageThere, a vegetable!

Actually the vegies are also considered a “Side” selected for the list on the menu, same as Mac & Cheese so nothing special here.
