I lived in the Bronx with a myriad of ethnic groups and their butcher shops.The people from Africa and the Caribbean wanted fresh meat, so the animals were alive until purchased.The people from southern Europe (Italy, Albania, etc) wanted to be sure what they were buying, so the animals were slaughtered and eviscerated, but otherwise intact until purchase. Imagine half a lamb hanging in the window looking like half a lamb.And we North Americans wanted meat with no reminders of its history, wrapped in plastic.
