Our outside cats had a technique with field mice. Eat the mouse (head first) and leave a little green organ about the size of a small cherry. How they carefully ate all around that and never bit it I can’t imagine. Years of practice I guess. I convinced myself it was the spleen, but don’t really know.
our inside cat just licks the gravy from his wet food and leaves the chunky bits. The outside feral cat eats everything but the feathers when she manages to catch a bird……which is not that often.
I used to have a cat that caught mice and birds and baby bunnies, but she never ate them. One night she brought a live baby bunny in the house and it was screaming, poor thing. Scared the crap out of me! you’d be surprised at how loud they can be.
One Thanksgiving about twenty years ago, we were in Mexico and a hotel had a sandwich board on the sidewalk outside telling us of the TG dinner they were serving for us ex-pats. It included “Gilbert gravy” and we’ve never been able to call them giblets ever since.
When I had to change shift for a few weeks to work on a project, my cat stopped eating his food and would only lick the gravy. So I added a bit of broth and blitzed it in the blender so it was all gravy.

I buy the canned cat food with “extra” gravy, and put the dish in the microwave for 4 sec to enhance the ambiance. Never anything left over.
