Pretty much any vegetable dish where you “accidentally” overcook the veggies would work. I’m thinking overcooked Eggplant Parmesan with a side of overcooked Brussels Sprouts. Just add some undercooked rice, and you’re all set.
My wife is a rarity in our town. She likes to cook. She’s also a nurse and can make the good stuff taste good. We order in about once a week and we go out to eat once a week – the latter is more of a social event as we meet up with friends.
Some months back my blue-eyed sweet heart was diagnosed with Parkinson’s. When her taste buds failed [evidently a common effect of PD – and in some ways the worst], even water tasted bad so we have had to do something we have never done, i.e., a lot of ‘market testing’ of packaged meals to find foods she might enjoy. None were great. Some were pretty good. And some were terrible – total rip-offs. Still working on that problem among others.
Fortunately Mom taught me the good stuff. I also was a short order cook for a time which helps. When the bad ones goes in the trash, we are able to cobble something together that is tasty and quickly done. But the damage to our meal choices and schedules has been done. Breakfast is pretty well set, but we still need an almost daily Q&A on what to do for lunch and dinner. We’ll get there. Just takes time.

Hey, I make deep dish zucchini pizza, and cut out all that other stuff. Beats take-out hands down! Good for a keto diet, too.

I wish my wife liked pizza. She claims it isn’t healthy enough.

A quick, easy.. and cheap would be to boil a couple of eggs with only a spoonful or so of water
