Stand-alone butcher shops are rarities in these parts nowadays.

For anyone who doesn’t get the “dishes” joke, it’s a reference to an old song, The Candy Man:

Satisfying and delicious.

Now you talk about your childhood wishes -

You can even eat the dishes!

Chop him a piece of bone from a femur. He’ll be busy for hours.

I think Poncho either (a) saw the ‘Wonka’ trailer one time too many (once was enough for me); or (b) is on a new veterinary medicine Chaz seriously needs to ask the vet about.
