A few days ago I asked the butcher for 6 shrimp. Unbelievably expensive. But hey! These are imported from a farm in Indonesian! He wrapped it. The whole thing was mostly paper and a big label.
Last year I won 2 pounds of ground Wagyu beef in an American Legion meat raffle. Later my wife didn’t know what it was, and used it in a casserole (Or as Minnesotans call it, “Hot Dish”).
As a kid, I remember something called a “Minute Steak”. They looked like little square burger patties in a package of four. Haven’t seen them in decades – might be a regional thing.
When my brother was little (about 50 years ago!) my mother sent him around the corner to the butcher to buy a chicken.. the butcher asked him what kind she wanted, and he looked at the butcher like HE was nuts, and said, “A DEAD one!”
I’ve read ground round makes a lousy meat loaf, it’s too lean. Fat has been villainized these days but it is a necessary part of the human diet. For example, my wife has a vitamin d problem and was told to drink whole milk because the increased fat helped with metabolizing the vitamin D

Buy the one pound and make meatloaf.
Meatloaf
1 lb lean (at least 80%) ground beef.
1/4 cup finely chopped onion.
2 eggs beaten.
1 cup Progresso™ plain bread crumbs.
1 teaspoon Italian seasoning.
1/2 cup ketchup.
1/2 cup milk.
Topping
1/4 cup ketchup .

I would guess that a ground sirloin or a ground tenderloin would be EVEN MORE expensive! (Although I don’t do the grocery shopping.)

Ground round is generally too lean and has less taste than ground chuck.

The apple doesn’t fall far from that tree. Meatloaf is a meal that always sounds good and can actually do well with lower quality ground beef….
