They’re better if you make and eat them with Polka music in the background. Or foreground if you are so inclined. “Cabbage rolls and coffee! Mmm Mmm good!” -The Schmenge Brothers.
I admire that you made some from scratch AND from memory! That cannot have been easy, especially doing the filling AND the doughy outside! (And to make something major while depressed – a special kudos!)
My Nana use to make things with cabbage like that, but really my only experience with it now is the occasional side of coleslaw. I applaude your wider acceptence of such things Amanda :-)
Mom always stuffed the cabbage leaves with a rice, hamburger and spice mixture, then put them in a large pot and covered them with a combination of tomato sauce and chunks of tomatoes and simmered them for a while. Very tasty.
If you ever visit my neighbourhood I’ll treat you to some home made cabbage rolls at Elena’s Country Kitchen, they used to call me “Miss DIfficulty” because of my dietary needs. Like it’s easy for me? LOL

Uh, yeah, the cabbage is only a transport mechanism for the rice & ground beef. (Or whatever is your fancy.)

One cannot have too much cabbage—at least, that’s my opinion.
