For a long time, it was believed that humans could only taste 4 basic flavors: salty, sour, sweet, and bitter. Then umami came along. I still have no idea what it’s supposed to taste like.
Fun fact: Some people don’t have the gene that enables them to detect bitterness. It’s unfortunate if one of them happens to be your mom, you complain that her food tastes awful, she tries it herself and doesn’t notice anything wrong, and orders you to eat what’s put in front of you.
