I grew up in south Louisiana, and there were always so many Cajun/creole foods I couldn’t stand. It wasn’t until much later that I learned about the Trinity and finally understood the problem. (I’m one of those people for whom bell peppers are both disgusting and overpowering.)

It doesn’t matter if it is Creole holy Trinity, Italian soffrito, or french Mirepoix, celery, and onions, are always the major part of any flavor base
