Maybe the cook should have spent a few minutes with a shovel “tenderizing” the meat first.And, anyway, how many people do you know that boil pork? Slow grilling really brings the flavor out (I used to live in Texas. I know my ’que.)

3 Step: OK, sausage is accepted and is pork, and babyback ribs, but loins and legs meat is more North Carolina through Tennessee.
