Defoe’s A Journal of the Plague Year would suit nicely.

How about Nostradamus? He fought against the plague. And some people think his quatrains are classic literature.

What popped into my mind (inappropriately) was Metamorphosis by Kafka. Imagine if that was a pandemic!
Once a day I go outside and say “Computer, end program”, just in case it works.
How about On the Beach by Nevil Shute. That was appropriately depressing.
