The wrasses are a family, Labridae, of marine fish, many of which are brightly colored. The family is large and diverse, with over 600 species in 81 genera, which are divided into 9 subgroups or tribes.

Its simple, tender flesh is well suited to pan-frying with a little butter. It can also be baked or barbecued, fillets will require only a few minutes per side to cook through.

There are some species that are lesser known about to the average angler but highly sought after by the veterans that come year after year. One of those species is the Napoleon Wrasse, otherwise known as Groupers.

I always take extra napkins when I get the breakfast tacos from this bodega. They make them fresh, at a tiny deli station, and they are difficult to control. I was feeling a bit that way myself.
