I just saw National Lampoon’s European Vacation and in the scene after the Griswolds check into the 1/2 star London hotel the kids turn on the tellie and basically get 3 snowy channels of a cheese making documentary at which the kids scream when they realize that this is what terrestrial TV was like (sans cable)… Looking back to the ’80s I remember being quite content with 24 channels in 1984 or so, and then 40 by the end of the decade and actually as a pre-teen in the ’70s before my parents got cable in 1978 or 79 we got by okay in Tampa with ABC, NBC, CBS, WTOG 44 the independent, 2 PBS channels and occasionally a snowy TV signal from Orlando or Fort Myers….
Anyhow, watching cheese getting made sounds like a punishment to moi, perhaps Goat, Pig and Rat are in purgatory……
You are almost correct pig. Here in Wisconsin those angels actually land in the fields all around the state. We call them Master Cheesemakers. Wisconsin has the only Master Cheesemaker program outside of Europe. We citizens are master cheese eaters who support them, as they make the tastiest, most award-winning, highest-quality cheese on the planet. Yeah, I’m a cheesehead.
I grew up in a Dairy State (New York – Upstate), but it wasn’t until I moved to Wisconsin that I truly understood the sheer volume and quality of Wisconsin Cheese. Incredible. It’s like a religion here. Yes, I’m a believer.

My favorite breakfast – these yellow-flagged (quarantine) days:
Take a small bowl – put in:
1 heaping tablespoon of shredded sharp cheddar (cheese)
1 heaping tablespoon of cubed ham (I KNOW!)
Two medium eggs
Mix – stir – whatever (Who am I, Betty Crocker?)
Microwave on High – 2 minutes (1100 watts)
Separately . . .
Take three medium-sized (~8") flour tortillas (de harina)
Interleave them on a plate with papertowels, each with a small spot of water in the middle
Microwave them on High – 1 minute
Tuck a third of the ‘ham & cheese omelet’ into each tortilla,
Roll it like a doobie – tuck – don’t twist – one end – leave the other open – rather like,
A breakfast burrito!
