Our mom wouldn’t let us cut a fresh apple pie until it had cooled enough for the juice to “set” and not run all over the place. She would still let us have pie while it was warm, though. Off topic, fresh baked bread right out of the oven, cut CAREFULLY, so as not to squash it, slathered with butter … Ooooooh, my mouth is watering, and it’s been 70 years.
did people REALLY put pies on windowsills to cool? seems un-hygenic to me. bugs, birds, yucky stuff getting into it. I’m over 60 and never saw this in real life.
I remember LLOOOONNNGGG time ago, when I was about 10, my sister and I and other hooligans in the neighborhood, snuck into someone’s yard and picked a bunch of apples. We took them home and my mother demanded to know where we got them from. Being me, I told her. She made me show her and when she saw it was from private property, she made me make an apple pie and take it to the owners, give it to them and apologize for stealing their apples. I never stole fruit again and I learned how to make pies. :o)

it has been too hot to put pies on the window sill to cool, but I have to admit, the idea is making my mouth water. Love a good fruit pie.
