Mary Lou: I think you and I could open a very special little place! Gene: Well...uh... Mary Lou: What? We've talked about this sort of thing before! Gene: But, a French restaurant? Mary Lou: Not a classic French restaurant! A bistro! Casual! Simple! Inviting! Where guests feel at home! Mary Lou: Besides, call it something Frenchy, and the snobs will beat the door down!

Wait, you’ve got to have the snobs…They’re the ones with the real money….

It’s the classic case of withdraw symptom..Can’t accept the fact the restaurant is done..She needs a little time to clear her head or find something completely different to distract her.

Even snobs need someplace to feel at home, ne sont ils pas?

How do you make a small fortune in the restaurant business?
Start with a large fortune.

Here in the states we call it a cafe; in England they call it a pub. But in France they call it what ever they want.

I figured this is where Gus’s retirement would lead. Mary Lou would NOT be satisfied with a normal 9-to-5 desk job; she wants a more interactive and (to her) enjoyable environment.
Gene…I’m not so sure.

To my manner of thinking, it still seems if they go through with this, that it would be safer on a number of levels to use Gus’s resturaunt, with its known traffic level and probably more budget friendly building sale to do this sort of venture. A little place out in farm country by their semi-run down farm, does not seem as likely to be sustainable.

It doesn’t even have to be French – take Panera; snob for St. Louis Bread Co.

I can think of maybe the worst possible name for it: “Wee Mon Sewer”.

Yesterday, S R suggested that Gene might run into Ruth if he went to Paris. (Good recall, btw!) And Ron posted a link to their first meeting. It was such a cute story line! I remember it now, but I wouldn’t have on my own. Thanks! Gene “bumps into” Ruth here. Ruth says she wants to go to Paris here. And, since we’re talking about good restaurant names, Arlo comes up with one, here.

She’s right, to a point and for a time. But that’s a great way to become one of the 80% of all restaurants that close within a year or two of opening.
Better off if one of them takes a hospitality or food service management course and the other hits culinary school for a while.
Or at least watch a season or two of “Restaurant Impossible”. :0
“We saw this restaurant for sale and we decided…why not?….” then $300,000 in the hole later, they knew why not.
Varnes about 10 years ago
OK, I like the going to Paris part. That sounds like fun…You don’t need a reason….But Americans, especially southern Americans are very different than the French. They’d be better off opening a classic American Tavern….One with good food, not bar food, one with a real chef, one that is fun to look at and dwell in, a comfortable place, sightly old fashioned, slightly progressive, one with entertainment in the evenings…That’s my formula anyway…..

Gus was worried about MaryLou always working and not spending enough time with her husband and child. maybe she doesn’t want to be with them and work is a good way to do that. better than having affairs.
